Excellent food and service Affluent south-city centre location. A visit to chic boutique Dublin hotel Dylan when it opened several years ago was like a journey into contemporary Celtic Tiger Ireland. We returned just recently to see how things had developed at this hip hotel, now that life has changed so much in recent times.     Over the past few years we have seen lots of new hotels popping up all over the country.  State-of-the-art spa facilities, golf courses and luxury suites are now the norm for an Irish hotel.  Yet, with the current recession casting doubt over everybody's lives, many hotels are now desperately struggling to stay afloat.  Prices are dropping, and unfortuantely so to are standards.  Cutbacks are evident to those of us who know hotels well, and the experience can often now be disappointing.  We were thrilled to find Dylan as fab as ever.  No compromise here. The staff and service were excellent, without exception.  The food was terrific.  The funky decor as fresh and unique as ever.  This is still the place to see and be seen. Familiar faces from the fashion and entertainment scene are mingling with the 'hot and happening' crowd in this exclusive hotel. What strikes you first of all is the incredible design. This is a fusion of traditional and contemporary  It is clever and it works. Colours are black and burgundy and shapes and textures are strikingly different.
