The town of Gorey in County Wexford is great for shopping and now since it has been by-passed on the N11 Dublin to Rosslare road, it is so much easier to get about. In the centre of town, close to both the train station and the new Shopping Centre, is the lovely Amber Springs Hotel. It was a very cold winter day when we arrived and we were soon so snug and settled in that were reluctant to go back outside!

ACCOMMODATION AT AMBER SPRINGS

Our room was on the third floor overlooking the main entrance and car park. We had lots of space, two very comfortable beds, and a bathroom with the greatest water-pressure in the shower! We had tea and coffee making facilities, good quality bathrobes and slippers, large desk area, plenty of mirrors and wardrobe space and a perfect sized television on the wall. There was also a tempting room-service menu available throughout the day, however we were saving ourselves for dinner!

The room was both warm and bright and well insulated from any noise. We settled in for the afternoon with the weekend papers and managed to get some work done on the laptop before it was time to get ready to go down to dinner.

DINING AT KELBY’S BISTRO

We had a lovely window table, great service and exceptional food when we dined at the restaurant at Amber Springs. With both a Table D’Hote and A La Carte menus, we had abundant choices and some great value options. We decided on the Table d’Hote as we found great dishes there and everybody is talking about watching spending these days! While my companion opted for the Roast Quail stuffed with Chorizo & Raisins, Garlic wilted Spinach and Bacon & Thyme Dressing, I had a special salad made up with Feta Cheese and Olives – just as I like it! We enjoyed a delicious Amuse Bouche of Blue Cheese Souffle in a shot glass with some crudities and then choose the Roast Fillet of Beef and the Grilled Brill Fillet respectively for our mains. Other choices on this menu included Barbary Duck breast, Grain Fed Chicken and stuffed Butternut Squash. All dishes and vegetables were local and seasonal and everything was cooked and presented to perfection. The A La Carte Menu gives a huge further choice range of dishes that every preference would be catered for, and we were pleased to see the provenance and supplier details on the back of the menu. There is evidence of an excellent chef at work here, and this was complemented by great service front of house.
We thoroughly enjoyed our dinner. The wine list contains both Old World classics and some New World gems and elegantly matches the food menus while also offering some great value bottles. We opted for a New Zealand Pinot Noir from Murdoch James which was a fruity spicy offering that paired very well with our respective dishes.

COCOON SPA AT AMBER SPRINGS

Of all the spas in all the hotels throughout Ireland, Cocoon Spa at Amber Springs impressed us particularly. It is aptly named, as guests are really ‘cocooned’ in pampering bliss down there! They have one signature product, Coconut Melt which is their premier product, and I had a full body massage using this which I would highly recommend. This wonderful Caribbean Coconut Melt is renowned for its healing and restoring properties and using a variety of massage techniques, including Lomo Lomo, Swedish and Shiatsu, the resulting treatment was without doubt, one of the best massages I have ever had. There are also a full range of treatments for both women and men at Cocoon using the Elemis product range, and Cocoon also offer a number of packages for individuals and groups including residential options.
Besides the treatment rooms being particularly generously appointed, another thing that really impressed me at this spa was the relaxation room. Each of the beds are separate from the others allowing for total privacy, there are fruit and cookies and juices and water as well as magazines and individual lighting. After the totally relaxing treatment, a spell in the Lotus Suite continues that feeling of complete peace and calm. The whole spa experience delivered in all areas promised - de-stressing mind, body and soul. I know that all spas claim to do this, but in reality it is rarely as good as this. Cocoon Spa has great treatments and therapists, thoroughly professional and totally effective.

Amber Springs Hotel treats its guests very well, the staff we met there were all friendly and helpful, the food, spa and accommodation were of the highest quality and it proved to us to be a hotel that ‘ticked all the boxes’ when it comes to our expectations of a great hotel experience. We will certainly return and highly recommend it.

What’s to do in the Area?

GOLF is very popular with several courses nearby including Courtown Golf Club and Enniscorthy Golf Club, both 18 hole. There is also Seafield Golf and Country Club, Woodenbridge, Arklow, Druid’s Glen, Wicklow and Coolattin Golf Clubs are all less than an hour’s drive from Amber Springs Hotel. There are two equestrian Centres, Curracloe and Ballingale Farm, details from reception at the hotel.

FISHING is available on the River Slaney which holds a good stock of Salmon. The coastline beaches provide feeding ground for Flounder, Plaice, Bass, Dabs and Dogfish. The hotel will provide information on Course, Game and Sea Fishing.
WALKING is popular in the area with paths that include Wexford Coastal path and The Wicklow Way which takes you through the Wicklow Mountains.
Many local attractions in the area include Powerscourt and Mount Usher Gardens; Glendalough; Avoca Hand weavers; JF Kennedy Memorial Park and Arboretum and Johnstown Castle and Agricultural Museum.
